This summer, Fiskebar enters a new season. Invited by Francesca Fucci, Michelin-starred chef Ludovic Turac takes over the kitchens with a Mediterranean menu created exclusively for Geneva: shaped by Marseille, the sea, spice markets, long lunches, late evenings, and the instinctive elegance that defines his cuisine.

Overlooking the lake, Fiskebar becomes a summer house of sorts: vibrant, sunlit and alive. Turac’s cooking moves with freedom: refined but never rigid, generous without excess, deeply rooted in flavour and emotion rather than performance.

More than a seasonal collaboration, this pop-up captures a certain Mediterranean art of living brought into the rhythm of Geneva: relaxed yet exacting, elegant yet warm.

Born and raised in Marseille, Ludovic Turac belongs to a generation of chefs redefining Mediterranean cuisine with sincerity and depth. Trained in remarkable kitchens, he cooks with a strong sense of place: shaped by the sea, the markets, and the warmth of Marseille.

His cuisine is instinctive and highly personal: Mediterranean at heart, yet open to elsewhere. He is known for revisiting the great flavours of the South with freedom, precision and emotion, always seeking what he calls “tastes and flavours from elsewhere".

Summer Masterworks

This summer at Fiskebar, Ludovic Turac brings the Mediterranean to Geneva. Far from a traditional Riviera postcard, the menu moves freely between Marseille, the Levant, Italy and North Africa, reflecting the chef’s instinctive and cosmopolitan approach to Mediterranean cuisine.

Familiar flavours appear where you least expect them: orange blossom in a bisque, star anise with slow-cooked vegetables, harissa meeting chimichurri in a pigeon pastilla.

Designed for Geneva and its summer rhythm, the menu captures something rare: a cuisine that feels both sophisticated and alive, sun-filled yet precise, where Mediterranean generosity meets the elegance and energy of Fiskebar overlooking the lake.
